Superfoods: Sweet Potatoes

I love sweet potatoes!

The nutrition facts of sweet potatoes include being loaded with the following:

  • Beta carotene
  • Vitamin B-6
  • Vitamin C
  • Fiber
  • Potassium

Beta carotene is converted to vitamin A in the body. Vitamin A may help slow the aging process and help fight the risk of certain cancers according to Mayo Clinic.

    1. I have not tried them in soup before, but I will plan to do that. I enjoyed a baked one with butter just before I posted the link. We often have them around for snacks. Just pull one out of fridge, heat, add butter and enjoy! I agree that there is no need for sweetener!

  1. For those not familiar with baking sweet potatoes—I choose small/medium potatoes, scrub them with a soapy dishcloth, rinse and dry. Prick with a fork and rub with olive oil. Put them on a foil-lined pan (a tremendous help at clean-up time) and bake for approximately 45 minutes. They are done when they are soft. SIMPLE COOKING
